Hearty Vegetable Soup (Classic Comfort Bowl)
Introduction
This cozy vegetable soup is simple, nourishing, and full of comforting flavors. Loaded with tender vegetables in a rich tomato broth, it’s perfect for chilly days, light dinners, or meal prep for the week.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup green beans, cut
- 1 cup cabbage, chopped
- 1 cup potatoes, diced
- 1 can (400 g) diced tomatoes
- 4 cups vegetable or chicken broth
- 1/2 cup corn (optional)
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme or mixed herbs
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, carrots, and celery; sauté for 5 minutes until softened.
- Stir in potatoes, green beans, cabbage, and corn.
- Add diced tomatoes, broth, salt, pepper, paprika, and herbs.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Taste and adjust seasoning. Serve hot and enjoy.
Tip: This soup tastes even better the next day and freezes beautifully.
