Hearty Vegetable Soup (Classic Comfort Bowl)

Introduction

This cozy vegetable soup is simple, nourishing, and full of comforting flavors. Loaded with tender vegetables in a rich tomato broth, it’s perfect for chilly days, light dinners, or meal prep for the week.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup green beans, cut
  • 1 cup cabbage, chopped
  • 1 cup potatoes, diced
  • 1 can (400 g) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1/2 cup corn (optional)
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme or mixed herbs

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, carrots, and celery; sauté for 5 minutes until softened.
  3. Stir in potatoes, green beans, cabbage, and corn.
  4. Add diced tomatoes, broth, salt, pepper, paprika, and herbs.
  5. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  6. Taste and adjust seasoning. Serve hot and enjoy.

Tip: This soup tastes even better the next day and freezes beautifully.
