Ingredients:
- 1 lb (450g) ground beef
- 1 medium onion, chopped
- 2 cups cooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1 tablespoon taco seasoning (optional)
- Salt and pepper to taste
- Green onions for garnish
- Salsa (optional)
Instructions:
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in the cooked rice, diced tomatoes, sour cream, and taco seasoning (if using). Season with salt and pepper to taste.
- Transfer the mixture into the prepared baking dish and spread it evenly.
- Top with shredded mozzarella and cheddar cheese.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped green onions. Serve with a side of salsa if desired.
