Ingredients (Makes 8–10 muffins)
Base ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 3 large eggs
- 1 cup oat flour (or blended oats)
- ½ cup shredded cheese (cheddar, mozzarella, or parmesan)
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ¼ tsp black pepper
Optional add-ins (choose 1–3)
- ¼ cup finely chopped bell peppers
- ¼ cup chopped spinach or kale
- 2 tbsp green onions
- ¼ cup cooked mushrooms
- ¼ tsp garlic powder or paprika
Instructions
- Preheat oven to 180°C / 350°F
Grease or line a muffin tin. - Blend wet ingredients
In a blender or food processor, blend:- Cottage cheese
- Eggs
until smooth.
- Mix dry ingredients
In a bowl, whisk together:- Oat flour
- Baking powder
- Baking soda
- Salt & pepper
- Combine
Pour blended mixture into dry ingredients.
Stir until just combined. - Fold in add-ins
Add shredded cheese and veggies. - Bake
Fill muffin cups ¾ full.
Bake for 20–25 minutes until set and lightly golden. - Cool
Let cool 5–10 minutes before removing.
