Ingredients
- 200 g shrimp, peeled and deveined
- 200 g scallops
- 500 g fresh clams, cleaned
- 1 cup pearl couscous
- 2 medium potatoes, peeled and diced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (400 g) diced tomatoes
- 4 cups seafood or vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon paprika
- ½ teaspoon cumin
- Salt and black pepper, to taste
- Fresh parsley or cilantro, chopped
- Lemon wedges, for serving
Instructions
- Heat olive oil in a large pot over medium heat and sauté onion until soft.
- Add garlic, paprika, and cumin; cook for 30 seconds until fragrant.
- Stir in diced tomatoes, potatoes, and broth; bring to a gentle boil.
- Add pearl couscous, reduce heat, and simmer for 10 minutes until potatoes are tender.
- Add clams, cover, and cook until they open.
- Gently add shrimp and scallops; simmer 3–5 minutes until just cooked.
