Cheesy Asparagus Roll-Ups


 


Ingredients (6 roll-ups)

  • 6 slices sandwich bread
  • 12 asparagus spears (2 per roll)
  • 150 g (5 oz) mozzarella cheese, cut into sticks
  • 2 tbsp melted butter
  • ½ cup breadcrumbs
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Trim the woody ends from the asparagus and blanch for 2 minutes in boiling water. Drain and cool.
  3. Remove crusts from the bread and flatten each slice with a rolling pin.
  4. Place a cheese stick and 2 asparagus spears on one end of each bread slice.
  5. Roll tightly and brush with melted butter.
  6. Mix breadcrumbs, garlic powder, paprika, salt, and pepper. Roll each bread roll in the mixture.
  7. Arrange on a baking sheet lined with foil or parchment.
  8. Bake for 15–20 minutes until golden brown and crispy.
  9. Serve warm while the cheese is still melted.

Optional Variations

  • Add a slice of ham or turkey before rolling.
  • Use cheddar, provolone, or Swiss cheese instead of mozzarella.
  • Sprinkle grated Parmesan on top before baking for extra flavor.
