Ingredients (6 roll-ups)
- 6 slices sandwich bread
- 12 asparagus spears (2 per roll)
- 150 g (5 oz) mozzarella cheese, cut into sticks
- 2 tbsp melted butter
- ½ cup breadcrumbs
- ¼ tsp garlic powder
- ¼ tsp paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C (400°F).
- Trim the woody ends from the asparagus and blanch for 2 minutes in boiling water. Drain and cool.
- Remove crusts from the bread and flatten each slice with a rolling pin.
- Place a cheese stick and 2 asparagus spears on one end of each bread slice.
- Roll tightly and brush with melted butter.
- Mix breadcrumbs, garlic powder, paprika, salt, and pepper. Roll each bread roll in the mixture.
- Arrange on a baking sheet lined with foil or parchment.
- Bake for 15–20 minutes until golden brown and crispy.
- Serve warm while the cheese is still melted.
Optional Variations
- Add a slice of ham or turkey before rolling.
- Use cheddar, provolone, or Swiss cheese instead of mozzarella.
- Sprinkle grated Parmesan on top before baking for extra flavor.
